New Recipe,

Sweet Potato Carrot Soup

feeds 3 or 4
(Home grown carrots) mmm,


Vegetable Broth 2.3 qrts
7 full grown carrots, chopped small
2 medium or one large sweet potato, chopped small
yellow curry powder, about 2 tbsp
1 tsp ginger
1/2 tsp lemon extract, or half a lemon, squeeze the juice,
1 cup water
salt, pepper to taste,.
1 bay leaf would be a nice touch, I did not have one today., and/or turmeric, just a dash.,

Put the broth and all seasoning in pot, boil, then simmer,.
Add carrots and sweet potatoes, add the cup of water, bring up to boil again.,
Stir, then simmer until the carrots and the potatoes are liquified,
may be up to four hours,.

To cut down on cook time, you can chop all the carrots and the potatoes in a food processor.
don't have that today either.
